Hello dear. Thank you for your great receipes. I enjoy them a lot. I have a question on the paella cooking. There is always a "caramelisation" step in all your paella receipes. Seems to be a characteristic of the paella. Is it possible to get the caramelised cruste in a "normal" flat pan? Or is the "paella pan" a must? Thank you for an advice. You dont need authentic Saffron, it is very expensive, I just use Food colorant like most restaurants use in Spain, no one really notices it and its much cheaper, add some chicken or pork or Seafood, much better
