Green Fried Rice| Palak Methi (Spinach n Fenugreek leaves) Rice| Vegetarian/Vegan Recipe

This is a healthy n simple recipe that incorporates green leafy vegetables.

Ingredients:

Palak/Spinach – 3 cups, roughly chopped;
Methi/Fenugreek leaves – 1 cup, roughly chopped;
Green peas (Frozen/boiled) – 1/4 cup;
Onions – 3/4 cup, chopped;
Garlic – 2 tbsp, finely chopped;
Ginger – 1 tbsp, finely chopped;
Lime/lemon – 1/4 wedge;
Green chillies – 1 tbsp, finely chopped;
Coriander leaves/cilantro – few twigs;
Green onion/spring onion – 2-3 twigs;
Cumin seeds/Jeera – 1tbsp;
Cooked rice – Approx. 3 cups;
Salt n pepper to taste;
Cooking oil – 2 tbsp.
