This insanely delicious, 40-minute red lentil curry is so flavourful and protein-rich but is actually quite easy!
2 tbsp coconut oil | 20 g | 0.7oz
3 cloves of garlic (minced)
1 tbsp fresh ginger (minced)
1 red or white onion (chopped) | 70 g | 2.5 oz
1 cup lentils | 200 g | 7 oz
1 1/2 cup canned chickpeas | 250 g | 9 oz
1 cup coconut cream (milk) | 260 g | 9 oz
1 can canned tomatoes | 400 g | 14 oz
1 tbsp lemon or lime juice
3 1/2 cups water | 850 mL
2 tbsp curry powder
¼ tsp coriander powder
½ tsp turmeric
(¼ tsp garam masala)
½ tsp pepper
1 tsp salt
