This creamy broccoli soup is so much more delicious than the dairy based versions.
16 cups of water in a large stock pot
1/2 cup “Better than Bouillon” Vegetable stock
1.5 lbs broccoli
1 red onion
5 stalks celery
6 -8 small bell peppers
2 cups carrot
1.5 cups cashews
Place all ingredients in a stock pot and boil on medium high heat for 10 minutes.
Blend ingredients together. Place back into pot.
Serve with a garnish.
