🥣 SOUP SEASON – Broccoli White Bean Soup for One! 🥣
We can collectively agree that we don’t eat soup past the 3 day mark, right?!
So, in rebellion of meal-prepping soup, here’s an easy recipe to make enough soup for, well… just you.
Find the recipe below for my Broccoli White Bean Soup for One!
🥦 Ingredients 🥦
• 1 tbsp olive oil
• 2 shallots, thinly sliced
• 2 cups broccoli
• 1/4 cup nutritional yeast
• 1 can white beans, rinsed and drained
• 1 tsp salt
• 1 tsp black pepper
• 1 tbsp garlic stock paste (this can be a substitute for veg stock, or, if you don’t have garlic stock paste, you can use vegetable stock)
• Enough water to cover the veggies
🔪 METHOD 🔪
1. In your favourite pot, add the olive oil, heat, and cook the shallots until softened.
2. Add the broccoli, nutritional yeast, salt and pepper and garlic stock paste to the pot.
3. Cook for 5-10 minutes to wake everything up, stirring occassionally.
4. Add the white beans & water, and cook until the broccoli is fully cooked, ~5-10 minutes.
5. Blend to your desired texture and enjoy.
