How to make Banana Quesadillas and Caramel Sauce
Today we will be demonstrating a recipe inspired by youtube user JCP15musical. He said, ” You should do world food. Like Spanish, French food etc.”
That is how I came to show you how to do this Mexican dish, Banana Quesadillas
Banana Quesadillas Recipe
8 oz Vegan Cream Cheese
¼ cup confectioners’ sugar
2 ripe bananas
6 flour tortillas ( 5 inches)
2 tablespoons vegan margarine
1 ¼ cup caramel sauce
6 oz Whole Soy & Co Soy Yogurt
1. In a large mixing bowl, use an electric mixer to beat cream cheese until soft.
2. Mix in 1 banana and confectioners’ sugar.
3. Once well mix.
Caramel Sauce Recipe
1 cup sugar
1/2 cup water
1. Add sugar and water to a heavy saucepan.
2. Boil on stove until mixture is condensed and a golden brown color is achieved.
3. Be sure to stir often

How long have you been vegan? I started trying the vegan lifestyle in the summer of 2009. I successfully transitioned in the summer of 2010.
What made you go vegan? I thought I was getting fat and I read the book “Skinny Bitch” and that is what started it all.
Were you always vegan? No, I was raised eating meat.
Is being vegan expensive? If all your doing is replacing meat with vegetables, then no, it may be cheaper.
What do you eat? Fruit, vegetables, grains, beans, legumes, nuts, and seeds.
How do you come up with your ideas? I am inspired by people and pop culture.
Where do you get your recipes? All over the internet and I adapt them to my taste and diet.
Do you crave meat? Only Lemon Pepper Chicken Wings, from American Deli in Atlanta, GA, but more the lemon pepper than the chicken.
What do you miss eating? Restaurant desserts and most dairy products.
What do you use instead of milk? Almond Breeze Almond Milk
What do you use instead of eggs? Applesauce, banana, baking soda, baking powder, white vinegar, and apple cider vinegar.
Why do you use applesauce? To replace the thick moisture of applesauce.
