Vegan Quesadillas with Black Beans (Gluten-Free Recipe)

These Mexican-inspired vegan quesadillas with black beans are perfect for lunch, dinner, a side dish, or a filling snack! The recipe is gluten-free, grain-free, dairy-free, nut-free, and super easy to make. 😍

6 tortillas (I used homemade GF)
1/2 onion, chopped
2 cloves of garlic, minced
1 bell pepper, chopped
1 cup fresh mushrooms, sliced
2/3 cup black beans cooked from dry, or canned
1/2 cup corn fresh, frozen, or canned
1 tbsp oil, divided
1 tbsp soy sauce or coconut aminos
1 tsp onion powder
1/2 tsp cumin powder
1/2 tsp (ground) oregano
1/4 tsp smoked paprika
1/3 tsp red pepper flakes (optional)
Salt and pepper, to taste
1 batch vegan cheese sauce (see notes on my blog)
