Plus, they’re easy to make and come together in under 15 minutes! 2/3 cup coconut milk

2 tsp chile powder

1 tsp chipotle chili powder

1 tsp salt

1/4 tsp garlic powder

1/4 tsp pepper

2 tsp minced garlic

1/2 cup vegan cheese – I used Daiya Light Cheddar Instructions Bring a saucepan of water to boil. Peel and cut potatoes into quarters, put on a baking sheet, and boil in the boiling water until tender (about 8-10 minutes). Drain the potatoes, add to the blender, and puree. (To make them creamy, I use a small egg beater and beat the potatoes and all their liquid together until smooth.) You should have about 1 1/2 cups pureed potato. In a small bowl, mix the coconut milk, chile powder, chipotle chili powder, salt, garlic powder, and pepper until well combined. Pour the saucepan mixture over the potato puree, stir to combine, and cover the saucepan with a lid. Allow to simmer on low for about 10 minutes. Spread 2 tbsp of the potato mixture onto each of six tortillas. Top with 1 tbsp of the vegan cheese and 3/4 cup of salsa. Serve with salsa and lime wedges. Recipe Notes Note: If you can’t find vegan cheese, try another dairy-free cheese such as Daiya cheddar shreds, or a 2% “cheese” cheese that’s 2% milk, 1% sour cream, and 2% cream cheese.
