EASY VEGAN BANANA BREAD | OIL & GLUTEN FREE

Combine in a small bowl:
4 bananas, mashed
1 cup dairy free milk

Combine in a separate large bowl:
2 cups buckwheat or teff flour for gluten free or normal plain or wholemeal flour.
1 tbsp. baking powder
1 tsp cinnamon
1/3 cup coconut, rapadura or raw sugar

Add the wet to the dry ingredients and stir well.
Add in any extras, eg. walnuts, rasins, choc chips ect.
Add in 1/3 cup of soy milk if it looks dry.
Bake in the oven on 180C fan forced for 50 minutes until a skewer can come out clean.
