So today I chatted all about vegan tacos! I love making vegan recipes, as you guys know I eat lots of vegetarian foods and love to cook. On this week’s episode of Nikki’s Nibbles, I show you guys a SUPER yummy recipe that includes salsa, tacos, and all the fixings! I am a huge Mexican food fanatic, so I like to eat tacos pretty much every week. Quinoa is the “faux meat” part of this recipe that makes these tacos extra yummy but also super healthy. Quinoa is packed with protein and is a great meat alternative. You can also use beans or a mixture of your favorite vegan filling if you want!
You know know I love making videos about healthy lunch ideas and healthy dinner ideas, and I think you could make these vegan tacos for either lunch or dinner! They are filling, yet really healthy! Not only is this Mexican vegan recipe healthy, it’s also really easy! You can vary the recipe in any way that suits your taste buds, but this is just my favorite way to make them!
