RECIPE BREAKDOWN:

Post Gym Smoothie
1 banana
4 ice cubes
1 cup water
1 scoop plant protein https://www.vivolife.com/products/perform
cinnamon
1 tbsp hemp seeds
3/4 cup hemp milk
handful fresh spinach
1 tsp flax oil
1 1/2 tbsp peanut butter

BLEND + ENJOY

Lunch – Tomato Soup
5 vine ripened tomatoes
3/4 large white onion
5-6 garlic pods
pink Himalayan salt
pepper
olive oil
dried herbs
2 tbsp apple cider vinegar
1 lemon, juiced
1 cup water

Chop tomatoes and spread evenly on parchment paper
fourth the onion and place throughout tomatoes
add garlic pods whole and place throughout tomatoes
sprinkle 1 tbs dried herbs
sprinkle 1 tsp pink Himalayan salt
sprinkle 1 tsp pepper
drizzle 1 tbsp olive oil
bake at 400 degrees for 30-45 minutes (turning them over half way)
remove, add to blender with apple cider vinegar, lemon juice and water
serve!

Lunch- Panini
2 slices sourdough bread
veganaise
ground mustard
hummus
sprinkle of garlic powder
sprinkle of pepper
small tomato
1/2 avocado
Miyokos cheese https://miyokos.com/collections/vegan-cheese-wheel/products/sun-dried-tomato-garlic-cheese
spinach
purple onion
drizzle of avocado oil
drizzle of balsamic cherry vinegar

Add all contents
place on griddle and char on medium high for 4 minutes on each side
serve with soup!

Dinner- Red Beans + Rice
1 lb red beans (soaked overnight)
1 cup white rice
1 large bell pepper
3 stalks celery
3/4 large white onion
6 garlic pods
1 tbsp dried herbs
1 tsp pink himiilayan salt
2 tbsp cajun spice (made sure it was vegan, sometimes they have animal products – so double check)
2 bay leaves
1 tbsp olive oil
5 cups water (for beans)
3 cups water (for rice)
1 tbsp hot sauce
1 tsp better than bouillon https://bit.ly/2JsImlk

add olive oil, chopped bell pepper, celery, onion and sauté in pressure cooker (setting saute) for 5 minutes
add in chopped garlic and sauce for another minute
add all spices and saute for 2 minutes, until fragrant
add water, beans, bay leaves, hot sauce and better than bouillon
mix well
turn pressure cooker to high, setting to 30 minutes
while beans are cooking, make the rice
add rinsed rice to a pot with 3 cups water
bring water and rice to a boil for 2 minutes
lower heat to simmer, with the lid on for 10-15 minutes (check rice throughout to see if it needs more water- too much water will make the rice sticky)
combine rice and beans and enjoy!
