Vegan Quesadillas Recipe – High Protein + Fast & Easy

(Recipe for two quesadillas)
Ingredients:
2 whole wheat vegan tortillas
2-4 tablespoons of jalapeno/pepper hummus
1/2 cup of black beans
1/2 cup Vegan mozzarella
1/2 Vegan cheddar Cheese
1 cup of cooked chopped broccoli into small florets
1/2 onion finely chopped
1 cup of spinach
2 tablespoons of tomatillo salsa (topping/garnish)
Guacamole/Avocados served on the side
dash of cumin, red pepper flakes, salt, black pepper, chili powder, garlic powder, onion powder, and cilantro flakes to taste

Cook onions with oil or water in a pan until they become translucent, then add the spinach until it starts to wilt, then add the beans and the broccoli and stir for a few minutes until cooked together well, adding the seasonings to taste. Set aside for later.

To make vegan Mexican cheese, mix vegan cheddar and mozzarella with seasonings to taste. Set aside to add to the quesadilla

Use this veggie and bean mixture after you have added the hummus layer and the cheese.

Fold over and cook quesadilla in pan without any oil or anything.

Serve with salsa, guacamole, and garnishes.
