Vegan Paella

Vegan Spanish Paella.

A classic Spanish dish made vegan.
Serves 4 people.

Ingredients:

-280g paella rice
-2 medium tomatoes
-2 globe artichokes
-1/2 red and 1/2 green pepper
-1 medium onion
-200g mushrooms
-3 small carrots
-6 cloves garlic
-8 sun dried tomatoes
-6g dried porcini mushrooms
-2 bay leaves
-1 tsp cumin
-1 tsp paprika
-1 1/2 tsps turmeric
-1/2 tsp black pepper
-1 tsp sea salt
-Several sprigs of parsley

Method:

-Prepare dried porcini mushrooms, sun dried tomatoes and saffron by adding boiling water.
-Add oil to a hot 32cm pan.
-Add onions
-Next fresh tomatoes
-followed by the red and green pepper
-Next, the garlic
-Stir ingredients
-Add the prepared globe artichokes (if they are canned artichoke hearts, add with the peas just at the end)
-Next, add the carrots
-Followed by the fresh mushrooms
-Add the rice and stir ingredients
-Make a hole in the mixture in the centre of the pan
-Add cumin, paprika, turmeric, black pepper and toast the spices before mixing with the rest of the ingredients
-After mixing, add the porcini mushrooms, saffron and sun dried tomatoes
-Stir in and cover with boiling water so that the rice is completely covered
-Add the salt and bay leaves only mixing lightly so as to not release the starch in the rice (no heavy stirring during the cooking stage of the rice)
-Once the water has been absorbed, check to see if the rice and vegetables are cooked and also check to see if it has enough salt and pepper
-Once ready, add defrosted peas and parsley (and canned artichoke hearts if you are using this ingredient)
-Mix in gently, turn off heat, cover with a tea towel and leave to rest for 5 minutes or so
-Serve with a squeeze of lemon
