In this video I share a vegan version of the Japanese vegetable pancake called okonomiyaki. It is really a cross between a pancake and an omelette and traditionally eggs are used for it. In this recipe I’m using chickpea flour instead which works really well and topping it with a super fresh cucumber, radish and pickledginger salad and vegan creme fraiche. I hope you will enjoy! x
