This was one of my first official Vegan meals when i transitioned.
It’s hearty and so flavorful, i love it!
Lentil Tacos:
Green Lentils-1 cup
1 Red bell pepper
1 Yellow bell pepper
1 Shallot
6 corn tortillas
Refried black beans ( i like the pacific brand )
Vegetable broth- 3 cups
Water- 1 1/2 cups
Olive oil- 2 tablespoons
Garlic powder/salt- 1/2 teaspoon
Pepper- 1/2 teaspoon
Paprika- 1 teaspoon
Garlic powder- 1 teaspoon
Guacamole:
3 avocados
2 roma tomatoes
1/2 medium yellow onion
1 garlic clove
1/2 jalepeno (optional)
5 sprigs of cilantro
1 lime
1/4 teaspoon salt
Tomatillo salsa:
6 tomatillos
1/2 serrano pepper
1 lime
1/2 medium yellow onion
6 sprigs cilantro (stems removed)
pinch of salt
