❅ VEGAN GINGERBREAD COOKIES ❅
(recipe from minimalistbaker.com)
1 flax egg
1/2 cup brown sugar
1/4 cup nut butter
3 Tbsp molasses
1/4 cup vegan butter
3/4 tsp ginger
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp salt
1/2 tsp baking soda
1 1/4 cups all purpose flour

Mix all ingredients except for flour and stir. Add in the flour slowly until the dough forms, and chill the dough for at least one hour. Then, preheat the oven to 350 degrees. Roll out the gingerbread dough and place the cutout shapes on a sprayed cookie sheet. Bake for 10 minutes, then let cool before frosting.

NOTE: I doubled the recipe for the video, but this is the original recipe.
3/4 cup whole wheat pastry flour
1/4 tsp baking powder
1/4 tsp salt
1/4 tsp plus 1/8 tsp baking soda
1/4 cup cane sugar
1/2 tsp pure vanilla extract
1 and 1/2 tablespoons almond milk
1/4 cup earth balance

Mix the flour, baking soda, baking powder, salt, and sugar in a large bowl. Melt the earth balance in a separate bowl, the add in vanilla extract and almond milk.Mix wet into dry, and then stir. Roll the cookies into balls and place on a sprayed cookie sheet. Bake for 9 minutes, then let cool before frosting.

2 cups powdered sugar
1 tbsp almond milk
1 tbsp earth balance

Mix all ingredients and place in a ziploc bag. Cut the corner of the bag in order to use it as a pastry bag.
