* HUGE TIP: You can cut the process in less than half the time by NOT using jackfruit in brine! Instead use jackfruit in water that just needs a good rinsing and break it up. (seeds an all! Hi guys! Welcome back to my channel. My name is Airam pronounced like “Eye-rum.”

Today we I am making an easy, yet delicious recipe! Vegan Jackfruit Green Enchiladas. Growing up as a kid, when my parents would take us to Mexican restaurants, I always ordered 1 Green & 1 Red enchilada. I could never choose! So I figured it would only be fitting to make a recipe for green enchiladas because I already filmed red enchiladas last year!

Ingredients used:


3 Cans of prepared Jackfruit in Brine (using my jackfruit method)
1/2 Tbsp Olive Oil
1 Tsp Vegan Chicken Seasoning
1 Tsp Garlic Salt
1/2 Tsp Black Pepper
1/2 Tsp Onion Salt

Enchilada Sauce:

2 Roasted Poblano Peppers
10 Tomatillos
1-3 Jalapeños
4 Garlic Cloves
1/2 Onion
1/3 Bunch of Cilanto
1/4 Vegetable Broth
(Which was 1 Tbsp Better than Bouillon with 1/4 Cup of water)
1/4 Cup Water
1/2 Tbsp Salt or to taste

Other ingredients used:

Corn Tortillas
Red Onion
Cherry Tomatoes
Queso Fresco
