Vegan Gingerbread House Recipe :: Day 1 of 12 Days of Vegan Christmas Recipes

On the first day of Vegmas my true love baked for me, a house made of gingerbread and candy!

Day 1 Mr Vegan makes a Gingerbread House!

Gingerbread Cookies (or make an entire house, too)
Dry Ingredients:
1 cup wheat flour or oat flour
1 TB tapioca starch
1/2 tsp baking soda
1/8 tsp sea salt
1/2 tsp cinnamon
1/2 tsp ginger ground
1/4 tsp cloves ground
1/2 tsp cream of tartar
Wet Ingredients:
1/2 cup mashed sweet potato yellow or white
1/4 cup molasses (not blackstrap)
1/4 cup brown sugar
1-2 TB plant based milk only if potato is too dry
Method:
1. In a large bowl, mix dry ingredients.
2.In a food processor or hand mixer, puree wet ingredients.
3.Add wet ingredients to dry ingredients; stir softly until combined. (pro tip: Be careful not to over mix!) Dough will be on the dry side. If it appears too dry, mix in 1-2Tb nondairy milk or if it appears too wet, mix in a little bit more flour.
4. Roll dough into a ball, and refrigerate 1-2 hrs (or overnight) until cold.
5. Preheat the oven 350F
6. Scoop out heaping of chilled dough, and roll into balls. (Pro tip: when not working on balls keep them chilled.) Roll out one ball between a piece of lightly dusted parchment paper on the bottom a one piece of wax paper on the top. Pull off top layer or wax paper, and cut out shapes.
7. Arrange cookies on a clean baking sheet 2 inches apart to allow for spreading. If you’ve rolled the dough into balls, dip a glass into cane sugar and gently smash down into a disc to help them cook more evenly. (Protip: To ensure cut-outs keep their form while baking, freeze them on the baking sheet for 10 minutes before putting them in the oven.)
8.Bake on the center rack for 10-12 minutes for (8-10 for cut-out shapes) or very slightly golden brown.
9.Remove from oven and let rest on the pan for a few minutes. Transfer to a cooling rack. Let cool completely before decorating.

Icing to hold the parts of the gingerbread house together is simply almond milk & powdered sugar. Start with a medium bowl of powdered sugar & mix tiny amounts of almond milk in and stir (long time) until icing is formed. Be very minimal with the almond milk even if it looks too dry it will eventually form icing.

Decorate with your fav vegan candies!
