A good breakfast sandwich is hard to beat. You want something that leaves you feeling full, but not heavy. These vegan Breaded Tofu Breakfast Sandwiches are a great option for a lazy Sunday brunch, or great for the weekdays when you want your morning to feel a little comforting. The seasoned and breaded tofu, smoky tempeh bacon, and seasoned spinach mix perfectly together and are one of my favorites for brunch.

An additional tip: You can mix some of that mustard with a little water to make a wet dip for the tofu. Dip the tofu into the wet mix then into the dry mix and you'll get more of that seasoning to stick to the surface.

That looks delicious! Would whole wheat flour work for the breading, or a different kind of wheat flour? (I have lots of different kinds of wheat-based flour, but no gluten-free!) And do you know what kind of spices are in the spice mix? I haven't heard of that but I have plenty of regular spices. (Or maybe I'll just put together my own spice mix based on what I think will taste good!)
