Welcome to my Vegan Broccoli Cheese Casserole Recipe that’s also Gluten Free! This revision of the Classic Cheesy Broccoli Casserole Recipe is a perfect addition for your Vegan and Gluten Free Friendly holiday meal planning (and also Dairy intolerant). I’ve served this to my family for the last few years now during the holiday season and they absolutely love it, and can’t believe it’s Plant Based!

It’s pretty easy to make but since many of the ingredients from the original recipe are substituted with Plant Based, Dairy Free and Gluten Free ones, watching the video is a good idea to see how to choose them, and how to prepare this dish with properly to make sure it turns out amazing!

Vegan, GF Cheddar Broccoli Casserole Recipe:

Ingredients:

16 oz Fresh or Frozen Broccoli Florets
2 1/2 Tbsp Plant Based Butter
1 1/2 tsp ENRG-Egg Replacer
2 Tbsp Warm Water
1/4 tsp Guar Gum
10 3/4 oz Vegan Cream of Mushroom Soup or Gravy
8 oz Vegan Mayo
8-12 oz Shredded Vegan Cheddar Cheese (depending on how cheesy your preference is)
1 1/2 C Crushed Gluten Free Crackers

Directions:

-Preheat oven to 350 *F
-Steam Broccoli Florets for about 10 minutes
-Use 1/2 Tbsp of the Vegan Butter to grease a 9×13 Pyrex Dish
-Prepare 1 Vegan Egg by adding the Warm Water to the ENRG-Egg Replacer and whisking thoroughly
-Add in Guar Gum and whisk thoroughly
-Add Cream of Mushroom product to Pyrex dish
-Add Vegan Mayo to Pyrex and whisk to combine well
-Add Vegan Egg to Pyrex and whisk to incorporate
-Add about 2/3 of the Vegan Cheese shreds to the Pyrex
-Add Broccoli Florets to the Pyrex and distribute evenly
-Top with remaining Vegan Cheese
-Place in oven on center rack for 30 minutes, uncovered
-Remove Casserole and sprinkle with Crushed Crackers
-Drizzle 2 Tbsp Melted Vegan Butter over top evenly
-Return to oven for 10 minutes, uncovered
-Remove from oven and allow to cool a bit before serving
