Something people really tend to struggle with when transitioning to a plant based lifestyle is giving up cheese. Thankfully, if you have found yourself in that situation, I have a recipe for you! This recipe is almost too good to be true. It is rich, creamy, savory, and healthy, as it is virtually fat free and oil free. On top of that, it is extremely nutrient rich and is made completely from vegetables. The nutritional yeast adds a nice cheesy flavor in addition to your daily requirements for vitamin B12. Seriously, this soup is perfect. Enjoy!

5 – 6 potatoes diced into 1" cubes
1 large white or yellow onion, diced
4 – 5 cloves of minced garlic
2 cups of broccoli, sliced into 1/2" – 1" pieces
2 1/2 cups vegetable stock
1 cup unsweetened almond milk
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp oregano
1/4 tsp paprika
1/4 tsp cayenne

-Saute the onion and garlic in vegetable stock until they're translucent and fragrant
-Add in the potatoes
-Pour in 2 1/2 cups vegetable stock to cover the potatoes completely
-Let the potatoes cook over medium heat for about 5-8 minutes until they're partially soft (you should be able to stick a fork in, but not too easily)
-Pour in 1 cup of unsweetened plain almond milk
-Add the spices and stir
-Place the lid back on and let it cook until the potatoes are softened completely
-Add 1/2 – 1 cup of nutritional yeast until you have achieved the desired "cheesy" flavour (don't hold back, add as much as you want)
-Using an immersion blender or regular blender, blend the soup until it has a completely smooth and creamy texture
-Add the broccoli and let it sit on low heat for about 5-10 minutes to soften the broccoli
-Serve in a bowl, over a baked potato, or in a bread bowl

Thought I'd post this since I already wrote it up so I could easily reference the recipe and make it tonight. I doubled it and added vegan bacon bits at the end, it was absolutely delicious! πŸ™‚

One word ,yumm! I made this with coconut milk and vegan cheddar jack cheese as I didn't have the yeast. My son loved it! He didn't even realize it was vegan ( he can be corny whenever I tell him I cooked vegan πŸ˜‘) this recipe is so simple to make yet so delicious. My new favorite πŸ’–
