This recipe is packed with flavor and creates a balanced, healthy vegan dinner with minimal effort. Just dump the ingredients into a slow cooker and walk away!
The combination of sweet potatoes, lentils and coconut milk creates a lovely, flavorful and nutritionally balanced meal. You can serve as-is or overtop rice, quinoa or a grain of your choice!
A spritz of lime juice overtop is also a perfect addition!
