PLANT BASED, OIL FREE PAELLA / VEGAN PAELLA / WFPB OIL FREE

Hi everyone! This paella is absolutely delicious and really easy to make. I hope you enjoy it as much as I do!

Ingredients
1 red onion
4-6 garlic cloves
1 can diced tomatoes
1 can rinsed chickpeas
2 cups brown rice
3 cups of water or vegetable broth
1 vegetable bouillon
1 can artichoke hearts
2 red bell peppers
1 cup black olives (sliced for faster prep time)
1 cup frozen peas
Juice of one lemon
1tbs paprika
1/4 tsp safran
1/2 -1 tbs sea salt
1/2 -1 tsp black pepper
Preheat oven at 400 F degrees

Mince garlic and
saute with a bit of water. Add tomatoes, spices, and chickpeas, and frozen peas, mix well. Add water, bullion and rice, mix well and bring to boil. Once boiling, reduce heat to simmer, cover and cook for about 40 min.
In the meantime, cut bell peppers and onion into thin stripes. Cut olives in halves, quarter artichoke hearts.
Line baking sheet and add vegetables.
Bake for 20-30 min
Once vegetables are just a bit crispy, and rice is done, mix vegetables and rice, enjoy.
