“No Tuna” chickpea salad sandwich in under 10 minutes
I’m currently obsessed with this lunch. This lunch is so easy, simple and delicious and it can be made for your work or for kids. Only main ingredient that needs to be prepped in advance is my “Tofu sriracha Mayo” and rest is easy. I make this lunch whenever I don’t feel like cooking or in a time crunch. If you’re going to be packing this for lunch to work, just keep bread & tuna salad separate. Assemble it when you’re ready to eat to avoid it from being soggy!

2 cups canned chickpeas (rinsed & washed)
1/3-1/2 cup Tofu sriracha mayo (recipe is on my page & website)
2 celery stalks
1/4 red onion
1/2 red bell pepper
1/3 cup jarred pickles
1/4 cup fresh parsley
1/2 tsp mustard powder
2 slices of whole grain bread or a baked sweet potato (I used Stonemill brand)
slice of a tomato
Pieces of lettuce or mixed baby greens
Salt & pepper per taste
In a bowl, toss chickpeas & mash as best as you can. Finely chop all other ingredients and add it to the bowl. Add tofu sriracha mayo, salt, pepper & mustard powder. Mix really well and enjoy it on top of a toasted whole grain bread or a baked sweet potato. Feel free to add a side of salad to add more volume to this meal.
