As we get deep into the Autumn the variety of mushrooms you can find in markets multiply and as well the first Jerusalem artichokes start appearing on restaurant menus. I love them and only discovered them when I came to the UK 15 years ago, this is not a vegetable we grow in Spain but I love integrating the different seasonal ingredients that our local farms grow and the flavor is so close to artichoke flowers that I love using them in my paellas. To make it feel extra special a few shavings of chestnuts will do the trick without spending fortunes on truffles.

Are Jerusalem artichokes used in Spain and for what exactly ever tried regular artichoke with mushrooms for paella i think chilli flakes will go great with this dish too and cumin
