Who’s in the mood for some simple cozy, comfort food?
Ingredients:
2 tbsp olive oil
4 shallots, finely chopped
1 inch fresh ginger, grated
3 medium sweet potatoes, chopped
4 cups vegetable broth
4 cups dried red lentils
5 tbsp Thai red curry paste
3 tbsp soy sauce
2 tbsp smooth peanut butter
1 can coconut milk
1/2 cup cilantro, chopped
Juice from 1 lime
For chickpeas:
1 can chickpeas, drained and patted dry
2 tbsp olive oil
2 tbsp soy sauce
1 tsp paprika
1/2 tsp chilli powder
1 tsp garlic powder
Optional – 1 tbsp sesame seeds
This is so quick and easy to make!
