Ingredients

Quinoa:
1 cup (170 g) quinoa
2 cups (480 ml) vegetable broth or water (with salt)
1 cup (240 ml) dairy-free milk
1 15 oz can chickpeas rinsed and drained
1 tsp onion powder
1 tsp oregano
3/4 tsp paprika
1/2 tsp sea salt
Black pepper to taste

Broccoli:
1 medium-sized head of broccoli
1 tbsp oil
A pinch of salt

Homemade “breadcrumbs”:
3 tbsp oats (gluten-free if needed)
1 tbsp nutritional yeast
1/2 tsp onion powder
1/2 tsp paprika
A pinch of turmeric
1 tsp soy sauce (gluten-free if needed)
A pinch of smoked paprika
Salt and black pepper to taste
1 tbsp oil

Vegan Cheese:
1 batch (200 g) vegan cheese sauce or 7 oz (200 g) of store-bought vegan cheese
