DELICIOUS VEGAN RECIPE | SPICY ENCHILADAS + PLANTAIN CHIPS! 🍴

VEGAN OR NOT YOU NEED THIS RECIPE SIS!!! I promise you’ll love it. My dad is an UNAPOLOGETIC CARNIVORE and loves these! Recipe below:

Spicy Vegan Enchiladas ( Makes 12-14)

What you’ll need:
First of all, pre-heat oven to 350 degrees.
2 poblano peppers
1 tomato
1 – 8 oz can tomato sauce (optional)
1 pack of enchilada sauce (green or red)
1 habanero pepper (optional)
1 onion (only need half the thing)
8oz of fresh spinach (or 1 pack of frozen spinach)
1 can of organic black beans (drained)
8 oz mushrooms
1-2 garlic glove(s) (to taste)
cumin (MAJOR KEY)
garlic powder/salt
pepper
chili powder
1 cup cilantro (goes into the dish but save some for the garnish)
tortillas (12-14)

Garnishes
vegan sour cream (optional)
Remaining cilantro
1 avocado

What to do:
Dice all ingredients into 1/4″ and finely mince garlic.
Chop 8-10oz of fresh spinach in food processor until grated pretty good. If you use frozen spinach you will skip this step. Whatever you do, don’t put the whole leaves into the dish, it will not have the right texture, too slimy sis.
Add 2 tbsp of olive oil to medium heat, use a large pan so you have room to blend and stir away
Add garlic and onion until aromatic (2-3 mins)
Add poblano peppers and mushrooms until tender (12-15 mins)
Season using the cumin, garlic salt and pepper (to taste)
Finally, add spinach, cilantro, habanero pepper, tomato, black beans (drained) and tomato sauce
Simmer covered until well blended and lookin goodT!

Assembly:
Spray non-stick veggie oil on 13″ casserole dish
Warm tortillas in microwave until pliable (MAJOR KEY)
Place 3 tbsp of filling inside tortillas and roll up. Place seam-down in casserole dish. Place them close together, real tight.
Pour enchilada sauce over everything.
Bake for 5-10 mins. Do not overbake, sis. You don’t want to ruin the texture of the tortillas or dry out the sauce.
Garnish with cilantro, avocado and vegan sour cream (optional).

This filling is also good like a taco so if you have leftovers do not discard. Just pick up some more tortillas on your next grocery store run, roll ’em up in your fist and enjoy like a true viking! Argghhhh lol
