Creamy Broccoli Soup – vegetarian

Hi mates,

Moksha this time is with a premium healthy and delicious recipe,Broccoli Soup.A must try as it is a very easy to make recipe and can try with a toast.

Key Ingredients:

1)Butter : 3tbspn
2)Bay Leaf :1pc
3)Onion : 1 Large size
4) Garlic clove: 4 pcs
5)Green Chilli : 1 pc
6)Broccoli : 350 gms
7)Milk : 3 cups
8)Water : 2 Cups
9)Salt to taste
10)Pepper Powder :1 tspn
11)Nutmeg Powder :1 pinch
12)Processed Cheese : 30 gms (optional)
13)Cream : 4-5 tbspn

Method:

1)In a heated heavy bottom pan,add butter into it.

2)Put a single bay leaf when the butter starts melting,Cook for few seconds,so that you may get its aroma.

3)Add chopped onion and saute it for sometime(approx 3-4 mins) on medium heat.

4)Add minced garlic and green chili,again saute for a while.

5)Add trimmed broccoli and cook until you see the colour changes into light greenish.

6)Add milk,water and salt,cover it and cook until you seen the tenderness.

7)Switch off the heat,remove the bay leaf and blend the mixture till it turns smooth.(add water as per the consistency you want)

8)Put the heat on one more time and let the mixture stay on till it boils.

9)Add pepper powder,nutmeg powder,cheese and cream,cook for few mins and your healthy soup is now ready.
