How to make Black Bean Quesadillas! Here is a quick 10 minute – no meat – yummy meal you can make on a weekday, a weekend or for taco night! It tastes REALLY good and is super easy to make!

The cool thing about quesadillas is that you can use just about any filling that you want!

This is also a great recipe to meal plan for the week or freeze for later.

For this version I used the following…

1 can of black beans
1-1/2 cups of frozen corn kernels
1/2 small red onion (chopped)
1 garlic clove (chopped)
2 cups of shredded cheese (i used Mexican cheese)
1 pack of taco seasoning (or you can make your own)
10 taco sized tortillas (I used burrito sized-your choice)
Salsa on the side
