Spicy Lentil Quesadillas
INGREDIENTS:
1 ¾ cup cooked brown lentils
1 red onion, sliced
3 tsp smoked paprika
3 tsp ground cumin
2 tsp oregano
½ tsp chipotle
2 cloves garlic
1 jalapeno, minced
4 tbsp coconut aminos
½ cup crushed/strained tomatoes
½ cup chopped fresh cilantro
2 small-medium sweet potatoes (baked or steamed and mashed)

Optional:
1/2 tsp salt
INSTRUCTIONS:
Add the onions, jalapeños, crushed garlic, and ⅓ cup of water to a pan on medium heat. Cook until the onions start to soften. Add coconut aminos and spices. Mix and cook for 3-5 minutes. Add the tomato puree and continue to cook the mixture until most of the water has cooked off and the sauce has thickened, then add the lentils and chopped cilantro. Mix to combine and set aside to cool.
Top half of your flatbread with mashed sweet potato, spicy lentils, cheese and/or avocado, or other toppings of choice. Place on a parchment-lined baking sheet. Bake at 350F for 10-15 minutes. Enjoy!
