How To Make Aloo Gobi Recipe

Aloo Gobi is a super simple dish made of spiced cauliflower and potato that is packed with flavour and spices. This classic Indian curry recipe is perfect for when you are looking for a vegetarian twist on Indian curries.

The most common and basic indian vegan curry that you will definitely be adding to your favourite recipes list. This recipe will surely become your go-to for those busy weekday dinner nights, even the kids will love it! Garnish with chopped coriander and serve with garlic naan or chapatti.

Ingredients:

300g Cauliflower
3 Potatoes
1 Salt
1 Chilli Powder
1 Garam Masala
2 Turmeric Powder (Haldi)
3 Cumin Seeds
100ml Olive Oil
2 Tomatoes
50ml Water

Method:

1. Heat the oil in large pan
2. Add the cumin seeds and cook for 2 minutes
3. Dice the onions and add to the pan and fry until golden brown and softened
4. Add the chopped tomatoes and cook for a further 5 minutes
5. Add the chilli powder, garam masala, salt and turmeric powder and cook for a few minutes
6. After a few minutes add water and allow the spices to cook for 10-15 minutes
7. Chop the cauliflower into small florets
8. Reduce the pan to medium heat and add the cauliflower pieces before cooking for 5-10 minutes
9. Chop the potatoes into bite-sized chunks and add into pan
10. Allow to cook for 15-20 minutes or until cauliflower and potatoes are soft and cooked through
11. Serve immediately and enjoy with garlic or plain naan bread!
