Aloo Gobhi Sabzi Recipe

Ingredients
1 medium cauliflower cut into medium florets
1 big potato cut into cubes
1 onion sliced
1 tomato chopped
1 tsp ginger garlic paste
2 green chilli chopped
1 tsp cumin seeds
1 tsp flat red chilli powder
1 tsp full coriander powder
1/2 tsp turmeric
pinch of hing (asafoetida)
salt to taste
handful coriander leaves
Method
Blanch gobhi in salt water and boil for 2 minutes then strain the water
to get rid of insects if any pungent smell and dirt
Heat 1/4 cup oil in a kadai splutter cumin seeds first then add onions green chillies and sautey for a while
Once onions just starts to golden add ginger garlic paste sautey for 30 seconds till raw smell goes off
Then lower flame add red chilli powder coriander powder turmeric asafoetida mix well
Then add chopped tomatoes mix well once tomatoes soften add the gobhi and aloo mix well add salt as per taste mix again ….
Cover and simmer 5 to 7 minutes then open and mix once to avoid masala from sticking to bottom
Then close lid again if at all masala is sticking down u can sprinkle little water and the cover and simmer for next 5 to 7 minutes
Then open again mix well check the aloo and gobi once they are soft cover and simmer next 2 minutes
Then open and garnish with coriander leaves mix well serve with paratha phulka chapati dal rice
Ideal for kids tiffin and lunch box very easy to prepare and tasty
