INGREDIENTS

#1 Frozen Yogurt Breakfast Cookies

½ cup small cut oats (45g)
a pinch of salt
1 tbsp maple, agave, date, rice syrup
1 heaping tbsp natural peanut butter
vegan yogurt of choice (about a tbsp per cookie)
toppings: berries, chocolate chips, nuts, seeds, chopped dates …
→ yields 3-4 cookies

#2 Super Simple Granola For One

½ cup small cut oats (45g)
a pinch of salt
1 tbsp maple, agave, date, rice syrup
1 tbsp melted coconut oil
*keep an eye on it during the last few minutes of baking
*let it cool fully so it can crisp up
serve with non dairy milk, yogurt, add to your bowl of müsli or top your smoothie bowl with it 🙂

#3 Rice Cake with Peanut Butter and Strawberry

additional toppings like nuts, seeds, granola, maple syrup, chocolate chips

#4 Spicy Chickpea Toasts

a handful of sun dried tomatoes
½ cup chickpeas (80g)
frozen parsley
spices of choice, salt to taste
1 tbsp white wine vinegar
optional: 2 tsp of the oil the tomatoes have been sitting in
also toast
and harissa or sriracha or any other spicy ingredient – use as much as you like, can handle

serves 1 or 2 as a snack 🙂

#5 Quick Peach Smoothie

2-3 halves of canned peach (is this grammatically correct haha)
1 frozen banana
⅓ cup – ½ cup non dairy milk (80-125ml)
optional: vanilla

#6 Amazing Tofu Hummus Nuggets

1 block firm natural tofu (200g)
2 heaping tbsp plain hummus
1 tbsp white wine vinegar or lemon juice
1 tbsp soy sauce
1 tbsp nutritional yeast
salt to taste
spices of choice
1 tbsp cornflour / cornstarch
*yields 10 – 12 nuggets
