#1 Vegan French Toast for One

1 tbsp corn starch
½ cup non dairy milk (125ml) (first add the one splash to the starch, then the rest)
a pinch of salt
1 tbsp maple syrup
½ tsp vanilla
a pinch of cinnamon
about 1 tbsp cold vegan butter for the pan
2-3 pieces of bread

toppings of choice: banana, pecans, powdered sugar, soy yogurt, nut butter, syrup …

#2 Sweet Pumpkin Soup – Hot Smoothie Bowl?

2 tsp cornstarch
1 ½ tbsp water
½ cup pumpkin puree* (75g-90g)
a squeeze of lemon juice
½ tsp vanilla
¼ tsp cinnamon
1 cup minus 2 1/2 tbsp apple juice (210ml)

toppings: granola, pecans, oats, frozen berries, almond butter …

serves 1
#3 Quick Rice Porridge with Crispy Tofu

for the porridge:

½ cup rice flakes or flattened rice (50g)
1 cup water (250ml)
heavy pinch of salt
1 tbsp lemon juice
a handful of frozen veggies, the smaller sized kind (not sure if big frozen cauliflower pieces would defrost fully with the porridge, but something like frozen peas, edamame, green beans, small cut carrots, frozen herbs, frozen spring onion works)

for the tofu:

½ block of plain firm tofu (100g) (3.5oz)
1 tbsp corn starch
heavy pinch of salt
additional spices of choice like paprika, pepper, chili etc

(if you want to make the whole tofu block, just double all the other listed ingredients)

oil for the pan – make sure to use a non stick one !

more topping ideas: black beans, cherry tomatoes, spinach, fried onion, grated carrot, walnuts …

I pronounce it "PEE-cans" so like the name for the letter "p" and then the word "can", emphasis on the first syllable.

Meanwhile the other common pronunciation is "pih-CAHNS". So "pi" as in "pit" followed by the "cahn" sound like in "condensation". 🙂

The second pronunciation is more common, but roughly 30% of people in the U.S. use the pronunciation I do. Oh goodness do I get teased for it though 😂 I actually studied this for a day in my Linguistics major.
