Try this delicious and protein-rich vegan red lentil curry recipe
Macros per serving (2 in total)
Protein: 29 g
Carbs: 81 g

Ingredients
1 cup red lentils (dried)
1 piece of onion
2 cloves of garlic
2 pieces of ginger
2 tomatoes
2 carrots
2 tsp curry powder
Salt
Black pepper
1/2 can coconut milk
Water
To garnish
Fresh parsley, or
Fresh cilantro
Serving suggestion
White rice
Instructions
1. Soak the lentils overnight in water. Then rinse well and boil in a pot with water for 15 minutes. Rinse again, set aside.
2. Dice the onion, mince the garlic, chop the tomatoes and carrots.
3. Bring a pan to medium-high heat, add a little bit of oil, then add the onions, garlic, and ginger. Fry for 3 minutes, then add the curry powder, mix again and fry for another 2-3 minutes.
4. Add the tomatoes and carrots, mix well and simmer at medium-high heat for 3 minutes.
5. Add the coconut milk and water, season with salt and black pepper.
6. Simmer for 15 minutes.
7. Serve with white rice, garnish with fresh parsley or cilantro.
