Air fryer Blender Pancakes
2 cups oats
1 banana
2 tbs apple sauce
6 tbs complement protein powder (or 1/4 cup buckwheat flour or oats)
1 1/4 cups almond milk
1 tsp apple cider vinegar
2 tsp vanilla extract
1/2 tsp baking powder
1/2 tsp baking soda
Add oats to the blender and blend until a flour forms. Add in all other ingredients and blend until smooth. Pour batter into silicone bowl. Place in air fryer basket and bake at 320 for 7 minutes. Top with your favorite toppings and enjoy!

Vegan Nachos
Organic corn chips
1 can black beans (drained and rinsed)
1 can pinto beans (drained and rinsed)
Taco seasoning (found below)
1/2 bag frozen fire roasted corn

Taco seasoning
2 tbs chili powder
1 tbs smoked paprika
2 tsp cumin
2 tsp garlic
2 tsp onion
1/4 tsp cayenne pepper

Optional Toppings:
Onion
Peppers
Tomato
Cilantro
Vegan Nacho Cheese
Salsa
Guacamole

In a skillet over medium heat, mix the beans and taco seasoning until combined and tender adding water as needed. Mix in the corn until warm.

On a baking sheet, line with parchment paper and add corn chips on top. Add the bean filling to the chips. Add any veggies on top as you wish along with the plant based cheese. Place in the air fryer for about 5 minutes until edges of chips are golden brown and crisp! Take out of the oven and add the salsa, guacamole and cilantro! Enjoy!

Veggie Loaded Twice Baked Potatoes
3 baking potatoes
1 cup black beans
2-3 cups chopped spinach
1/2 large red bell pepper chopped
1/2 onion chopped
5 cloves minced garlic
1/2 cup full fat canned coconut milk
1/2 cup nutritional yeast
Salt and pepper to taste
TOPPINGS:
Scallions
Vegan mozzarella

Wash potatoes and poke holes. Place in air fryer at 400 for 45 minutes. SautΓ© onion and peppers until onions are translucent. Add in garlic and beans and mix until combined. Mix in the spinach until it starts to wilt. Sprinkle in a little bit of salt, pepper and nutritional yeast. Once the potatoes are done. Let them cool enough to touch them and then cut in half and scoop out the middle. Place the skins to the side and place the potatoes in a bowl. To the potatoes, add coconut milk, nutritional yeast and salt and pepper to taste. Mash together with a fork, masher or beat with an electric hand mixer to make extra fluffy. Once mashed to your desired consistency, add in the sautΓ©d veggie and bean mixture and mix until combined. Scoop the potato veggie mixture into the potato skins and bake in the air fryer again at 400 for about 15 minutes. Garnish with chopped scallions and vegan mozzarella cheese or choice of vegan cheese. Enjoy!

Chickpea Cookie Dough
1 can chickpeas (drained and rinsed)
1/4 cup gluten free oats
1/4 cup gluten free flour
1/4 cup+ a little extra sun butter or nut butter
2 tbs applesauce
2 tbs coconut sugar
2 tbs maple syrup
1/2 tsp baking powder
1/2 tsp baking soda
Sprinkle pink salt
1 tsp vanilla extract
1/8 tsp almond extract (optional)
1/2-1 cup vegan chocolate chips (really just however many you want)

Place all ingredients except the chocolate chips in a food processor and blend until thick and smooth. (I use this one and its absolutely amazing!) Scrape down sides if needed and blend again. Take out the blade and mix in chocolate chips. Transfer to a bowl! Enjoy it by the spoonful, dip a gf pretzel in it, or form into cookies/ place in skillet or baking pan and bake it!
BAKING INSTRUCTIONS:
Preheat air fryer to 350. For cookies, form into balls, place on cookie sheet and bake for 7 minutes. For a cookie skillet, place in a baking dish or skillet and bake in the air fryer for about 10 minutes.
