Soft gingerbread cookies!!
RECIPE
3 cups gluten-free oat flour
1/2 cup organic sugar
1 tsp. baking powder
1/2 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1/2 tsp. ground ginger
1/4 tsp. salt
1/4 cup vegetable oil
1/4 cup molasses
1/4 cup almond milk
1/2 tsp. vanilla extract
Preheat the oven to 375 degrees Fahrenheit. To a bowl, add oat flour, sugar, baking powder, cinnamon, nutmeg, ginger, and salt. Stir well. Add oil, molasses, almond milk, and vanilla. Stir until the dough comes together. Roll the dough out on a piece of parchment paper. Cut out gingerbread people using a cookie cutter. Place on a cookie sheet. Repeat until all the dough has been cut into cookies. Bake 10-12 minutes. Let cool on the cookie sheet for a few minutes. Makes about 15 cookies.

Is it soft or crispy? If I used gluten free pastry/AP flour would it make a firmer and more solid cookie than the oat flour?

Im now baking these but for the flour I did half oats half rice flour.. could that explain why my dough was drier than yours? I had to add splashes of milk when needed but nevertheless the dough tastes good

I have issues with sugar. I am going to substitute sugar with stevia and xylotol, does someone has an ideo with what to substitute Molasse? Its okay if the taste changes a bit. Thanks

Thank you for the recipe!! I made these… it came out pretty good.. but I wanted a stronger flavor. Next time I will add more ginger and some cayenne pepper..(I heard that adds to the gingery taste!) Thanks again for a gluten-free AND vegan option. My son enjoyed making these with me…and enjoyed eating them!!!
