Deliciously Ella Inspired (but actually totally different 😂) Creamy Beans + Mushrooms with Cauliflower and Spinach
1/4 cup chopped onion
1 tbsp olive oil
8-10 mushrooms, sliced
1 garlic clove, minced
1/4 cup dry white wine
1 tsp dried Italian herbs
2 cups cauliflower rice
1/3 cup water
2 tbsp raw cashew butter
1 tbsp Dijon mustard or 1/2 tsp white miso paste (my preference)
1 tbsp nutritional yeast
1/2 tsp garlic powder
1 can navy beans, rinsed and drained
2 handfuls of spinach
2 tbsp soy milk
squeeze of lemon juice
Start by adding the oil to a pan set to medium high heat and sauté the onions for 3-4 minutes. Add a splash or two of water if the pan gets too dry. Then add mushrooms and garlic. Cook for 3-4 minutes and then add a sprinkle of salt and pepper.
Next add 1/4 cup white wine and dried Italian herbs. Cook for 3-4 minutes or until the liquid is absorbed.
Then add the cauliflower rice and water. Cover and simmer on medium heat for 5-7 minutes to soften. Then add cashew butter, mustard or miso, nutritional yeast, and garlic powder. Mix well then add the navy beans, spinach, and soy milk. Cover and steam for 2 minutes.
Finish with a squeeze of lemon and taste to see if it needs more salt. Serve topped with avocado, chopped parsley, and lots of black pepper. You can also sprinkle some vegan parmesan cheese on top too, that’s so good!
