Enchilada Recipe
1 can black beans
1 can enchilada sauce
1 – 1 1/2 cups steamed sweet potatoes
1 medium onion
1 small zucchini
3-4 chopped canned jalapeño peppers (fresh is always better)
3 cloves garlic
1 tablespoon cumin
1/2 tablespoon paprika
(add any Mexican spices you have, thats all I had at the moment)
Tortilla of you choosing
Brags, tamari or salt to taste

cheese sauce
1/2 cup soaked cashews
1/4 – 1/2 cups water ( you can always add more so start with 1/4
1/4 cup nutritional yeast
1 teaspoon garlic powder
salt to taste
