This tofu breakfast sandwich is good any time of the day, but I love making it for breakfast on the weekend.
Ingredients
-1 package of Tofu (I like to use firm. Extra firm comes out too firm, and doesn’t have the right texture)
-Veggie broth – just enough to cover the bottom of the casserole dish, a thin layer.
-Apple Cider Vinegar – about 2 tbsp
-Liquid aminos – about 1-2 tsp (this is optional, I just like the salty flavor it gives it, but you don’t have to use it.)
-Garlic Powder – about 2 tsp
-Onion Powder- about 2 tsp
-Turmeric Powder- about 2 tsp
-21 Seasoning salute- about 2 tsp (optional. you can used any herb you like, or none at all. Pepper would be good to add though)
*If you have black salt, feel free to add that to give the tofu an eggy flavor.*
-Nutritional Yeast- about 2 tbsp
Instructions
-Preheat oven to 400 degrees Fahrenheit
-Open tofu package. Drain tofu.
-Cut tofu into slices. Whatever sizes you want.
-Lay tofu flat in a casserole dish.
-Add vegetable broth, just enough to cover the bottom of the casserole dish.
-Add ACV
-Add liquid aminos
-Add half of the spices on the tofu
-Bake in the oven for 20 minutes.
-Flip tofu. Add the rest of the spices.
-Bake for another 30 minutes.
-Put together sandwich.
-Enjoy!
I highly recommend you try adding some chive vegan cream cheese on the sandwich, it is soooo good! We love it! Kite Hill is the bomb!!
Feel free to add some vegan meats, like bacon, sausage, etc.
I like adding tomato slices on mine.

I want to say thank you so much to everyone who sent kind messages and thoughtful condolences. We appreciate it so much! Words can’t even describe how heartbroken we were, we still are, but it does get easier. At first I wasn’t sure how I would go on. She was and is my soulmate. She was the best baby ever. Life will never be the same without her. I’m so grateful I was lucky enough to have her in my life and be her mother for almost 16 wonderful years! She was my true happiness.
