Roasted Veggie Quinoa Bowl

For the toppings I use:
1. Tessemae’s honey poppy seed dressing. You can purchase this from your local health food store or grocery store
2. Avocado Aoili
For the Avocado Garlic Aioli:
1 large avocado, halved and pitted.
1 large or 2 small garlic cloves.
1/2 tablespoon fresh lemon juice, or more to taste.
1/4 cup soy-free Veganaise (or vegan mayo of choice)
Fine sea salt and freshly ground black pepper, to taste.
Blend all ingredients in food processor
3. Chili Garlic Sauce, Huy Fong Foods Inc. You can also purchase this at your local grocery store.
