Vegan Mac and Cheese- Soul Food!!

Hey Fam!! I am so excited to bring to you the vegan mac and cheese recipe. This is the first video in my Vegan Thanksgiving Series. I’ll be whipping up some vegan soul food in the kitchen so that you or I won’t missing out on any of that good cooking that we’re used to this year. This dish was the bomb, and I hope you enjoy it. Recipes:
Boil then strain veggies
1 cup carrots
1 onion
3 golden potatoes
4 garlic cloves

Pasta
Boil another pot of water and cook pasta per instruction
I used whole grain and gluten free and both times it turned out great!
If you use these types of noodles I recommend leaving it a bit firm so it does not over cook

Sauce
Pre-soak one cup of cashews for 24 hours (but the minimum 3 hours). Rinse the cashews off before use.
Add cashews to blender
Add boiled veggies
2 tbsp of nutritional yeast
1 cup of non-dairy milk (I used soy milk for this recipe. Any will work, just get unsweetened and unflavored)
Juice of one lemon
1 tbsp vegan butter
1 vegetable boullion cube
1 tsp of onion powder
1 tsp of garlic powder
1 tbsp of tahini
BLEND for 2-3 minutes or until all smoother

Drain noodles and spread onto a baking dish
Add salt, pepper and butter (optional) to noodles to season and get moist
Pour cheese mix to noodles and mix
Add salt and pepper to taste

Optional- I used 1-2 cups of vegan cheese the first time I made this and in this recipe to give the look and taste of real Mac N Cheese, and it was delicious. When I actually made this on Thanksgiving, I did not add the cheese and it was the star of the show. They did not taste the original version, but I think both turned out great. So, if you have a bomb vegan cheese, use it. If you do not like vegan cheese, don’t! Either way, you won’t be disappointed!!!

Preheat over to 350 and bake for 20 mins covered
Remove foil and bake for an additional 5-7 mins or until brown on top!
