Vegan Chickpea Salad Sandwich
Ready in 10 minutes, this easy vegan chickpea salad sandwich recipe is a perfect on the go lunch recipe. This chickpea sandwich is a great vegan alternative to tuna sandwiches.
1/4 cup of dry, cooked chickpeas
1 tbsp of vegan chipotle mayo
1 stalk of celery
1 tsp of diced red onion
2 slices of whole wheat bread
1 leaf of green leaf lettuce
1. Add cooked chickpeas to a blender and pulse until chickpeas become finely grated.
2.Add grated chickpeas and vegan mayo to a bowl and mix well.
3. Dice celery and red onion and add to bowl. Mix well.
4. Add 1 leaf of green leaf lettuce to a slice of whole wheat bread and top with chickpea salad. Serve and enjoy!
