Remember those chicken salad sandwiches you used to love? Well, you know by now that we love to re-create and transform an old favourite and this is no exception. We’re subbing chicken for the humble chickpea (garbanzo bean) to create a Wicked kick-ass meal in under 10 mins. You = belly full. Chickens = free to roam and live a good life!

FULL RECIPE:

Preparation time: Under 10 minutes
Makes 2 – 3 Sandwiches

Ingredients:
x2 tins of chickpeas (drained)
x2 slices of bread
3 TBSP pesto (recipe here: https://youtu.be/Iwkwr_4c1dM)
2 TBSP vegan mayo
¼ tsp thyme
Salt & Black pepper to taste
A few slices of red onion
Handful of spinach (lettuce/watercress if you prefer)

Directions:

Mash the chickpeas, thyme, black pepper and salt in a bowl.
Add vegan mayo/olive oil if a little dry.
Spread 3 heaped tbsps of the chickpea mix evenly on one slice of bread and layer up with sliced red onion and spinach leaves.
Top off your sandwich with bread, cut in half and serve up.
