It’s been a minute since my last breakfast video hasn’t it! This one features 4 easy and tasty vegan recipes – fluffy soft pretzels, a winter-y overnight oat smoothie, pesto tofu ‘cream cheese’ on toast and a cozy apple porridge.

Ingredients:

#1 Simple Apple Porridge:

1 apple
½ cup apple juice (125ml)
½ cup non dairy milk or water (125ml)
pinch of salt
½ tsp cinnamon
½ tsp vanilla
½ cup small cut oats (45g)

topping ideas: vegan yogurt, nut butter, extra cinnamon

#2 Pesto Tofu Spread

1 block firm tofu (200g = 7oz)
1 tbsp lemon juice, more if needed
1 ½ tbsp vegan pesto*
*sub for 1 tbsp olive oil, 1 tsp nutritional yeast, 1 tsp dried herbs, an additional pinch of salt

salt to taste

toast, cherry tomatoes, avocado, balsamic glaze etc

#3 Chocolate Orange Overnight Oat Smoothie

½ cup small cut oats (45g)
a pinch of salt
½ tbsp semi ground flax or chia seeds
¾ tsp clementine, orange zest
1 tbsp unsweetened cocoa powder
1 tbsp almond butter
3 tbsp vegan yogurt
½ cup non dairy milk (80 ml)
2 tsp agave

1 banana, frozen
¼ cup extra non dairy milk, more if needed (60ml)

# Soft Pretzels

250g spelt flour (2 cups)
1 ½ tsp salt*

½ cup warm non dairy milk (125ml)
2 ½ tbsp vegetable oil or melted vegan butter
2 tbsp raw sugar
1 ½ tsp dry active yeast

1 cup hot water (250ml)
2 tbsp baking soda

melted vegan butter
cinnamon sugar, seeds***

*yields 4 pretzels

Notes:

*Like I mentioned in the vid these pretzels are a little less salty than your average German soft pretzel. So feel free to use another ½ tsp – 1 tsp.

**Here’s two ways you can freeze the pretzels:

Bake them, let them cool off, then freeze them.

Freeze them right before you’d add the baking soda solution. So after they have risen for the second time. Freeze them for 1 hour. Take them out, brush with the baking soda mix and then freeze them fully. Apparently that way you gives you get a better, fluffier outcome – haven’t tried this method yet soooo don’t know for sure

*** if you want the seeds toasted, sprinkle them over the pretzels after you’ve brushed them with the water baking soda mix
