Find out how to make one of Japan’s popular quick and easy street foods, Okonomiyaki. This was one of my go-to dishes when I taught English in Japan.

Nicky’s Vegan Okonomiyaki (Osaka, Japan ๐ฏ๐ต Style)”
Ingredients:
– 1-2 Mountain Yams (Aka Nagaimo Yam).ย You can find them in your local Asian market.
– 1-2 cups of shredded cabbage
– 1/2 cup of shredded carrots
– Cut up green scallions
– DIce up a few 3-4 mushrooms
– Kombu Dashi powder (Brings Umami flavor to Okonomiyaki and can be found at local Asian market)
– Tempura Batter
– Rice flour
– Pink Himalayan Salt
– Pepper
– Water
Directions:
To make tempura crips:
– Add a little tempura mix with water in bowl and whisk until smooth
– Pour a little batter into hot skillet and cook on both sides until pieces (crisps) are golden brown both sides.ย Drain grease and set tempura crisps on the side
Preparing Okonomiyaki Batter:
– Place all mentioned vegetables in bowl
– Add rice flour (Use your discretion) into bowl
– Pur remaining tempura batter into bowl with rice flour and vegetables (If you want your Okonomiyaki to be crispy)
– Add 1-2 small packets of Kombu Dashi powder
– Add Sweet Earth’s Vegan Hickory & Sage Benevolent Bacon (This vegan bacon adds some delicious flavor!)
– Add a little salt and pepper (Optional)
– Mix all ingredients really well, let set aside for five minutes while skillet gets hot with oil
– Pour batter into hot skillet and cook on both sides until golden brown (Like a pancake)
Adding Garnishments:
– Drain grease and then add preferred toppings:
– Okonomi sauce (Can be found in local Asian market.ย Okonomi sauce completes the taste for the Okonomiyaki.ย Japanese product).
– Add green scallions
– Add cut up Nori seaweed
– Sprinkle Everything But Bagel Seasoning (Can be found at Trader Joe’s)
– Add pickled Pink Ginger
– Add Tempura crips around pickled Pink Ginger
