Quesadilla burritos… why have one when you can have both?! These quesadilla burritos are seriously delicious and VEGAN!
Start by making the quick guac and salsa and set them aside in the fridge whilst you make your quesadillas and the burrito filling.
We’ve made our filling with tofu strips but you could use seitan, beans or other veggies! Add the olive oil and chipotle paste to the pan, mixing together well before adding your peppers and your tofu strips. Once these have cooked down nicely set aside and crack on with the black bean rice.
Fry off your spring onions before adding the black beans and cooked rice. Cook this for a couple minutes before adding in your coriander and salt.
Now it’s time to make the quesadilla! Lay out a tortilla wrap in your pan and add a thin layer of refried beans followed by a generous layer of vegan cheese, spring onions & tabasco sauce. Feel free to switch these fillings up as you prefer!
Building your quesadilla burrito is the best part – layer up the guac, salsa, spicy rice and chipotle strips. Careful not to overfill the burrito otherwise you won’t be able to fold it easily! We rolled ours in foil to help it stay together whilst eating.
