Me and @mensch.chef just harvested some fresh tomatillos from his urban garden and decided to give our tribute to a Mexican street food staple creating our own version of quesadillas!

PLANT BASED DUCK QUESADILLAS:

- 2 x flour tortillas
- 100g x vegan cheese
- 80g x spiced vegan duck
- 1 x Tbsp vegan butter

SALSA VERDE:

- 18 x giant tomatillos
- 2 x small white onions
- 3 x cloves garlic
- 3 x jalapeños
- 2 x lime juice
- 1/2 x bunch coriander
- Season as needed

PICO DE GALLO:

- 6 x medium size tomatoes
- 1/2 x onion
- 1/2 x bunch coriander
- 1 x lime juice
- 1 x lemon juice
