Last year we joked about the “Rick Rubin Special” — an imaginary dish of “tofu with some brown sauce” that Rick claimed lead to his weight gain. I came up with a simple tofu and mushroom gravy meal for Ryan to mukbang on his Friday night livestream and he loved it so I kept elaborating on this dish, adding brown rice, mixed veggies, and eventually a side of my Tuscan Kale Pilaf, steamed potatoes, and homemade apple cranberry sauce for some holiday season flair. This year I upgraded the tofu steaks with a maple glaze and served it with a side of roasted seasoned potatoes instead of plain steamed ones. 🤌
